I grew up thinking that the perfect pancake (my favorite food as a child) was made with a certain mix. As an adult I began to understand that anything with that much sodium, aluminum, completely processed flour, and preservative content couldn’t be good for me . . . or my kids! So on went the search for a substitute! At the risk of sounding like a commercial: our pancake search went on and on. We had a couple successes and a lot of gloppy, icky, flapjack failures.
A few years ago (I say a few, but really, I’m older than I care to admit . . . and it was more like seven or eight), a friend introduced us to Sue Gregg. My friend bought her whole line of cookbooks and loved them. (I keep meaning to ask if she still uses them, but alas in my old age my memory seems to be failing me.) I simply signed up for the free recipe sampler and helped myself to all the free recipes on her site! This is where I got our now favorite pancake recipe! We use oatmeal in the blender batter waffles/pancakes - heart healthy AND yummy! We also love the baked parmesan chicken and a few others. Hope you enjoy too!

Said friend does still use the cookbooks on occasion. Yet, her very favorite recipes from the entire cookbook collection are still the two recipes you mentioned (blender batter pancakes and baked parmesan chicken). Enjoy your waffles!
